Hopefully going to get a iPhone in the next few days.

One question is it worth getting the 16GB if it available. I will be going on the £30 contract, as this is the same as my current one, so I will have to pay the £99 for the 8GB or £145 16GB. My current phone has a 2GB card in it which is enough for my music and videos. So would 6GB, on the 8GB, be enough for applications that I may download?

That should be plenty of space unless you want to add loads of music. You lose about a gig or so with the OS etc. I have about 10gb of music on mine and Videos will fill it up so i went for the 16GB.
